Oatmeal Peanut Butter Balls

If you are looking for an easy, somewhat healthy sweet snack, this is for you! I am definitely not the healthiest person in the world. My go to snacks are salt & vinegar chips and Dr. Pepper. Can I get an AMEN!

Anyway, I decided I wanted to start having some healthier options around that were easy to make. These little treats are surprisingly tasty and so quick to make.

Ingredients

1/2 cup peanut butter

1 3/4 cup oats ( I used quick oats, but old fashioned will work too)

1 tablespoon chia seeds

1/2 cup chocolate chips (dark chocolate are my fave)

1/3 cup agave sweetener (could also use honey)

1 teaspoon vanilla

1 ripe banana, mashed

Directions

  1. In a large bowl combine oats, chia seeds, and chocolate chips- set aside.

  2. In a microwavable bowl add peanut butter and agave. Microwave for about 20 seconds to get peanut butter slightly melted. This will make it easier to stir.

  3. Take out of microwave, add vanilla and mashed banana. Stir until this is smooth.

  4. Pour the peanut butter mixture over the oats & stir until all oats are covered. If your mixture is too wet, you can add more oats.

  5. Shape mixture into small even size balls. To make the size uniformed use a cookie scoop.

  6. Place in the refrigerator for 15-20 minutes to help them stick together.

  7. Serve, and enjoy!!
